Here is how you make Kitchen Sink Veggie Risotto:

makes 4 servings1)-preheat oven to 400 degrees F- in a smallish baking pan, toss 2 cups butternut squash with 1 tsp olive oil, 1 tsp pepper, 1 tsp basil and 1 crushed/minced clove garlic-roast for 20 min2) -boil 4 cups water and dissolve soup base, keep warm on low heat3)-slice mushrooms and green onions-chop tomato-gently heat 1 tsp olive oil, 1 crushed garlic clove, 1 tsp pepper in a med-large sauté pan-add green onions, spinach and mushrooms and sauté until lightly cooked-add arborio rice and stir until well coated and translucent-add white wine and cook til evaporated-stir in 1 cup of pre-made bouillion base, stir often and simmer gently until absorbed, continue adding stock in 1 cup increments until all 4 cups have been added (soup base/rice process should take 15-20 minutes)4)-top each serving with an equal amount of roasted butternut squash-let stand 2 min or so and serve*optional: sprinkle a small amount of shaved Parmesan or Romano cheese on top (not included in nutrition info)Number of Servings: 4Recipe submitted by SparkPeople user KARENLESLIE.
