1 1/2 cups onions chopped
2 tbsp of olive oil
1 quart any kind of broth
2 1/2 cups chopped cabbage
2 1/2 cups chopped sweet potato
1/2 cup of peanut butter
2 tbsp of soy sauce
1 can of diced tomatoes with chilies
fresh mint to taste


How Do I Make Indonesian Veggie Stew?

Here is how you make Indonesian Veggie Stew:

in a soup pot cook 1 tbsp grated ginger root and 2 minced garlic cloves in a little oli for a minute....then add 1 1/2 cups chopped onions and a little salt. Stir til the onions soften.Stir in 2 1/2 cups chopped cabbage and 2 1/2 cups diced sweet potatos and 1 quart broth. (any kind)Cover and simmer for about 15 min.While it's simmering, put 1/2 cup peanut butter and 1/2 cup water in microwave and heat til you can stir it smooth.add 2 tbsp soy sauce to this.add to the soup 1 can of diced tomatoes with chilis(or 1 can regular and add some cayenne pepper for kick)add the peanut butter stuff and simmer til veg are tender.VERY IMPORTANT!!!!
