1/2 c zuchinni cut into halves

Here is how you make Tofu Veggie Stew:

Add the chicken stock and whole can of diced tomatoes and bring to a boil. Add in potato and let boil for 5-10 minutes. Add in remaining ingredients and let simmer for an hour or so. I prefer my stews to be thicker, so I tend to add some cornstarch as well as some seasonings such as italian, garlic powder, and a mango curry mix I have available.Enjoy!
