1/2 block firm tofu
drizzle of olive oil
1 cup canned black beans, rinsed and drained
1 yellow onion, finely chopped
1/2 red bell pepper, chopped
1/2 green bell pepper, chopped
1/2 c canned sweet corn
1 large carrot, grated
1/2 cup finely chopped broccoli florets
2 cloves garlic, pressed or finely minced
3 T. soy sauce
2 T. cumin
1 t. garlic powder
1 t. coriander
salt & pepper to taste
4 T. Thick n Chunky style salsa
1/4 c. chopped green olives
1 T. lime juice
6 Sonoma Carb Cutting tortillas, or similar low carb whole wheat tortillas
1 can medium enchilada sauce
1 avocado
0% plain Greek yogurt
2 chopped green onions


How Do I Make Tofu and Veggie Enchiladas?

Here is how you make Tofu and Veggie Enchiladas:

Heat very small amount of olive oil in large non-stick pan. Saute onion, green and red pepper, and garlic until onion softens. Add grated carrot, green olives and broccoli, cooking 5 minutes more. Break apart tofu and add to vegetables along with soy sauce, salsa and other seasonings. Keep sauteing until some liquid cooks off and tofu begins to brown just a little. Add lime juice, taste and correct seasoning if need be. Divide mixture amongst 6 tortillas, rolling securely so filling won't come out of the ends. Place back in non-stick pan. Pour enchilada sauce over all, and simmer over low heat for about 10-15 minutes until all is bubbly and heated through. Sprinkle with chopped green onion and serve with avocado slices and a generous dollop of Greek yogurt. Makes 6 servings.Number of Servings: 6Recipe submitted by SparkPeople user NIKID17.
