3 C. bagged cabbage slaw
2 C. shredded fresh carrot
1 C. bagged broccoli slaw

Tofu Mayonnaise:
1/2 pkg. Mori Nu Silken Lite Tofu approx. 1 C.
1 TB Cider Vinegar
2 tsp Dijon Mustard
1 Tb Honey
1/8 tsp each of your preferred herbs. I used ground fennel and celery seed.

1 C toasted unsalted sunflower seeds

Here is how you make Veggie Slaw with Tofu Mayonnaise:

This makes 6 servings of 1-cup each.In a bowl, mix together veggies. Add Tofu Mayonnaise and stir well.Use bagged shredded "cabbage slaw" and "broccoli slaw", plus shred your own carrots, with peel on or off, as you wish.To make Tofu Mayonnaise blend all the other ingredients in food processor or blender. Adjust as you like. If you need it, may add 1 TB extra virgin olive oil. I did not use it in my original recipe. The herbs I used are my preference. Use whatever suits you.I toasted 3 TB of raw sunflower seeds and tossed those over the top. Very crunchy and delicious! Enjoy!Number of Servings: 6Recipe submitted by SparkPeople user DTCELLO.
