Here is how you make Spicy Thai Veggie Noodles (Raw, Vegan, and Gluten Free):

1. Prepare noodle mix. Spiralize (or cut into strips with a vegetable peeler) the zucchini into spaghetti size noodles. Cut the peppers and carrots into small strips (julienne thickness if possible). Set mix aside.2. Prepare sauce. Combine remaining ingredients except the basil and cilantro in a high speed blender until smooth. Start with around 1 C of water and only increase to desired sauce consistency. Once you reach the desired consistency, add basil to blender and mix just to combine. If you do not have a high speed blender, you may want to mince garlic and roughly chop the basil before adding to blender to ensure that the ingredients get uniformly incorporated into the sauce.Pour sauce over noodle mixture and mix with tongs to coat. You may want to start off light with the sauce and only add more as needed. This way, you don't over dress the noodles and can reuse any extra sauce.Sprinkle roughly chopped cilantro to garnish.Makes six large portions.
