Here is how you make Super Veggies and Polenta:

add olive oil to skillet over medium high heat. add onions, saute one minute. add garlic and cook until onions are translucent. add peppers, mushrooms, broccoli, and chard. add salt and pepper. cook until chard is wilted. add chicken broth and goat cheese. stir in lemon juice. Cover and simmer for 5 minutes. Slice polenta into 1/2" slices and warm as per package directions.to plate: place 2 slices of polenta on plate and top with veggie mixture.
