Mix apples, sugar & spices together thoroughly; slowly bring to a boil (takes about 15 to 20 minutes). Turn down on low heat or place in crock pots on low and cook until thick and slightly mushy (your preference) for about 6 hours.Pour, hot, into hot prepared pint canning jars (makes about 10 jars full). Process 10 minutes in boiling-water bath.*Water-bath ProcessingTo prepare jars and water bath: Examine tops and edges of jars to see that there are no nicks, cracks or sharp edges on sealing surfaces. Wash jars in hot soapy water, rinse. Cover with hot water. Let jars remain in hot water until ready to use. To prepare lids and rings - bring a pan of water to boil place lids and rings in water and turn heat down on low; leave in the water until ready to put on jars. About 10 minutes before ready to use, fill water-bath kettle (kettle needs to be large enough to hold jars & water that covers 1 to 2 inches above the jars) half full with hot water; heat. (The water should be hot but not boiling when jars are placed in kettle). Invert processed jars on folded towel to drain.To fill jars: Taking one hot jar at a time, pack in hot mixture to within 1/4 inch of top. Wipe top and screw-threads of jar clean with a clean damp cloth and seal immediately with a lid and a ring. As each jar is sealed, place on rack in the water-bath, allowing enough space for water to circulate.To process: When all jars are in the kettle, add boiling water to cover them to depth of 1 to 2 inches. (Do not pour boiling water directly on jars). Cover kettle; heat water to boiling; reduce heat to hold water at a steady but gentle boil. Start counting processing time; process 10 minutes for the following recipes. Remove jars from kettle. To cool: Place jars upright a few inches apart on several thicknesses of cloth; keep out of draft. After about 12 hours, test for seal (metal lids will be depressed in the center. You will hear a popping sound when they seal.). If the seal is incomplete, either bring the produce back to boiling and repack in sterilized jars with sterilized lids, or store in the refrigerator for immediate use.
