Chop onion and chipotles. Add to large crockpot with rinsed beans. Add enough water to cover the beans by 1.5 inches. Add in cumin, oregano, garlic, black pepper, and chili powder. Cook on low for 6-8 hours. Drain and reserve excess liquid, the mash the beans thoroughly with a potato masher or an immersion blender. You can use a regular blender or food processor, but it's sticky when blended and has to be done in batches, so the immersion blender is more convenient. Add in cheese, tomato paste, and salt. Add more spices to taste if desired. Add enough of the reserved liquid to get a texture that suits you and cook in the crockpot for another half hour so the flavors can blend. Freezes very well.
