Remove seeds and membrane from peppers. Cut into 1 inch dice and pulse in food processor to fine mince. Saute' in 2 Tbs. oil with diced onion to soften. Meanwhile put beef broth and canned tomatoes in crock pot set on low. Drain and rinse canned beans and add to broth. Add minced pepper mixture and sliced apple.
