Here is how you make Creamy Roasted Garlic Beans:

1. For the Garlic: Preheat the oven to 400 degrees. Cut the top of a head of garlic, so the top of each garlic clove is visible. Drizzle the olive oil and rub in with your fingers. Wrap in foil and bake for 50 minutes to an hour.2. Heat a little water (3 - 4 tbsp) in a large soup pot or dutch oven over medium heat. Add the onions and a pinch of salt. Cook, stirring frequently, until softened, about 3 to 4 minutes. (Add a little water at a time if needed) Stir in the carrots, celery, and sage. Cook for 5-7 minutes until the vegetables are tender.3. Pour in the broth and the milk, add in the beans and the pepper. Boil over medium heat, uncovered, until the beans are softened and the soup is thickened, about 1 hour. If you need to, add in some water, a 1/4 cup at a time if it's getting too thick. 4. Once the beans are tender, add in add in 4 to 6 cloves of the roasted garlic and allow to cook in soup for about 10 minutes.
