1 cup oats
1/4 cup teff
1 cup almond milk - vanilla unsweetened
3 tbsp agave nectar (or more to taste)
1 cup blueberry kefir
1/2 cup water
1 egg
2 egg whites
1 cup blueberries
handful of nuts (your choice)
1 tbsp cinnamon (or to taste)
1 tsp nutmeg (or to taste)
2 tbsp vanilla extract
1 pinch salt


How Do I Make Oats and Teff Blueberry Porridge?

Here is how you make Oats and Teff Blueberry Porridge:

Preheat oven to 350. Spray baking dish with cooking spray. Bring almond milk, kefir, agave nectar and water to just about boiling. If your kefir looks curdled, don't panic, it should come out fine. Add oats and teff, bring back to a boil stiring often. Remove from heat. Wisk egg and egg whites in a small bowl until frothy. Fold into oat mixture. Add remaining ingredients and stir to incorporate. Pour mixture into baking dish. Place in pre-heated oven and bake for 30 minutes. Serve warm plain, or with milk or yogurt and a side of fresh berries. Serving Size: Makes 3 generous meal servings or you can stretch it out to 4 or 5 servings for a snack.
