The ingredients for Ange's Borscht are:

1 med - large Yellow onion
4-5 large carrots
1 head green cabbage
1 can small beets, or more if you like them
2 cans organic diced tomatoes
steak- I used 1 lb grilled rib eyes from the night before that had been grilled to medium rare doneness, and about .75 lb of round steak that had been bbq'd in the crock pot in my homemade bbq sauce
Approximately 2 cups water, beef stock, or beef bullion
Handfull of fresh chopped parsely
3-4 TBSP of Old Bay Seasoning - low salt preferred
2 Tsp of dried dill - more to taste
2 tsp dried basil - more to taste
Garlic, can be powdered, fresh, I grilled my meats with powdered garlic, and then added more while sauteing

Here is how you make Ange's Borscht:

Please note there is no salt in this recipe except what was in the canned tomatoes, beets and Old Bay Seasoning. Some will need to add salt and pepper to taste when eating. I am a big fan of McCormicks Old Bay Seasoning Low Salt. I called them and there is no MSG in this product, it is just ground herbs and spices. I use it just about any savory dish to boost flavor without calories.Most dried bullions and canned soups have MSG added under the name Natural Flavor or Modified Food Starch. Borscht traditionally includes white potatoes and sour cream on top. I eliminated these for this soup.Part of the appeal of this soup is it is not simmered for long so the cabbage stays slightly crunchy. Saute onion first, then add sliced carrots in olive oil in big pot till onion is translucent.stir in Old Bay and other herbs, garlic to saute- except for Parsely - wait till end so it stays greenPut chopped cabbage in pot and saute a few minutes, remember to stirAdd diced steak. Drain and cut up the beets to bite size and add to mixture that is still sauteing without water.I used left over lean rib eye steaks that had been grilledwith garlic the night before and diced small - 2 steaks equaled about 1 lbI also had a piece of crock pot BBQ'd round steak that I added. I suggest Jack Daniels BBQ sauce added 1 TBSP at a time to taste to sub for the BBQ flavor, or any other brand you like.At this point you have been sauteing for maybe 5-10 mins while you chopped and added ingredients and the cabbage is still raw and uncooked. Add tomatoes and other liquid and bring to a simmer. Add parsely. While cabbage is still slightly crunchy, turn it off and let stand.
