Olive Oil Chili Powder (to taste) 2 tsp - 1 tbs Cumin Powder (to taste) 1.2 tbs Salt (to taste) How Do I Make Easy Chicken Chili?Here is how you make Easy Chicken Chili: Boil one who chicken breast (2 split breasts, bone in with skin) in water until done. Save stock. Once cooked, cool and shred meat using 2 forks. Set aside. In a heavy soup pot on high heat, saute diced onion and sliced garlic in olive oil until translucent, 5 minutes. Do not brown. Add peppers and saute 5 minutes. Add tomatoes and tomato paste and 2 ladels of chicken stock (one cup). Bring to a boil and add shredded chicken. Lower heat and simmer for at least one half hour, longer if needed/prefer. Add kidney and white beans and another ladel of stock if needed. Continue to simmer until beans are hot. Add spices and stir well. Allow to simmer another 20 minutes.
