Olive Oil (1/4 cup)
Pesto packet (dry)
Diced Water Chestnuts
salt and pepper to taste

Here is how you make Pesto Chicken Lettuce Wraps:

Chop up pepper and onion very fine. I used my pampered chef chopper. (Almost minced). Saut? pepper and onion in large frying pan with olive oil (10-15 minutes). Add salt and pepper to taste. Follow directions on pesto packet, mix with the water and olive oil. Add to onions and green peppers. Next, add a can of diced water chestnuts (depending on how you like it, you may want to chop). Chop up the chicken and add. Let simmer together on low for 10 minutes. Wrap in lettuce. Or, if you would rather use a wrap, try a low-carb, high fiber wrap....a tomato basil flavored wrap would be delicious with this mix!
