1/8 C Sliced Almonds
1TBS Sesame seeds
2 TBS of fresh Cilantro
1 TBS Lime Juice

1/2 C rice vingegar
4 TBS Sugar or use Splenda for even lower calories
1/4 teas Sesame Oil- not toasted

Here is how you make Asian Chicken Salad- similar to Panera's:

Cook Chicken breast however you prefer. I usually boil it in water with salt and pepper. You could also cook on stove or even grill it. Let chicken chill for salad and cut in strips on the bias. I usually make the chicken in advance for another meal and just reserve some for this salad. Toast the Almonds in a pan for 5 min in a 350 oven- let cool and set aside. Chop the cilantro and add lime juice over cilantro- let this sit while you prepare the dressing. Dressing recipe makes nough for 6 servings or more. Dressing: 1/2 C rice vingegar4 TBS Sugar or SplendaBoil sugar and vinegar until sugar disolves- about 4 min. Let this cool completely. Once this is cool- pour vinegar/sugar mixture into Blender or use a hand blender and blend and slowly add 1/4 teas of sesame seed oil. Dressing is not very thick. In large bowl, mix Romaine, sliced chicken, lime soaked cilantro, toasted almonds, sesame seeds and toss with 2 TBS of dressing. ENJOY.Save the remaining dressing for future salads!!
