I had this salad at Original Joe's and loved it. Here is what I came up with at home. The dressing could be made with fresh avocados, which I did not have. But I did have frozen guacamole avail, so used it. Tortilla chips are not included in the nutrition count because what you use can vary widely.

10 to 12 cups chopped kale
1 to 2 cups chopped romaine hearts
2 cups roasted sweet corn (used frozen, under the broiler)
1/2 cup diced red onion
16 oz cooked chicken breast diced

4 TBS guacamole
4 TBS olive oil
1/2 cup light sour cream
1 cup salsa
1/2 cup lime juice (you may want less)

Here is how you make Kale,Chicken and Tortilla Salad with avocado lime dressing:

Dice cooked chicken breasts, add to corn, red onion, and salsa and 2 TBS lime juice and mix well. Set aside. Whisk the guacamole, olive oil and 1/4 cup lime juice. Let set while you remove the stems from the kale and chop it. Then take the guacamole dressing and massage it into the kale leaved for about 5 minutes. It will soften the kale. Add the kale to the corn, chicken, salsa mix, and add the chopped romaine hearts. Place in large platter type dish. Take the remaining 2 TBS of lime juice and mix it with the sour cream. Drizzle over your salad.( I put it in a wax paper pastry bag so I could drizzle it over the salad in a pretty presentation.) Serve with your choice of tortilla chips or a tortilla "bowl".
