Fresh ground pepper tod
1 teaspoon olive oil
1 cup low sodium chicken broth
1 cubed seeded English cucumber
1 cups grape tomatoes, halved
1 yellow bell pepper, cubed
1/2 cup chopped pitted kalamata olives

Dressing:
3 Tablespoons extra-virgin olive oil
zest from 3 small (organic) lemons
3 Tablespoons fresh lemon juice
2 Tablespoon minced fresh basil
1 Tablespoon minced fresh lemon thyme (or regular)
1 1/2 teaspoon red wine vinegar
1/4 teaspoon sea salt
3-4 garlic cloves, minced

Here is how you make Mary's Favorite Greek Chicken Salad:

Brush chicken breasts with olive oil and sprinkle pepper. Brush a grill pan with olive oil and warm on medium-high heat. Add chicken; cook 2-3 minutes on each side or until browned. Add 1 cup broth; cover, reduce heat, and simmer 10 minutes or until done. Cool; shred chicken. Discard broth.To prepare dressing, combine 3 tablespoons oil, zest and remaining ingredients; stir well. Add to chicken, vegetables and olives; toss well. Cover and chill.Add feta cheese prior to serving.
