1 lb chicken cutlets (about 6)

1/2 pound trimmed green beans
3 Tablespoons red-wine vinegar
1 Tablespoon apricot jam
1 Tablespoon Dijon Mustard
1 bag of mixed salad greens
1/3 cup dried cherries
1/4 cut sliced almonds

In large skillet, heat 1 tbsp of oil. Season chicken with salt and pepper. Cook (in 2 batches) chicken on both sides, 1-2 minutes per side. Transfer to plate. When cool enough to handle, slice crosswise. In medium sauce pan, bring salted water to boil. Add beans. Cover and cook 4-6 minutes. Rinse under cool water; drain well. In small bowl, whisk together vinegar, jam, mustard and remaining olive oil. Season with salt and pepper. In large bowl, toss salad greens and all but 1 tablespoon dressing. Divide salad among four plates, arrange chicken, beans, cherries and almonds on top.
