2 Tbsp vegetable oil
2 # boneless chicken - cubed
1 large onion
8 cloves garlic, peeled/ minced
2 tsp thyme (dried)
2tbsp good quality curry powder
1 tbsp onion powder
1 1/2 tsp asian chili paste of 1/2 teaspoon cayenne pepper (*Careful)
2 carrots washed and shopped
5 stalks of celery with leaves chopped
1 cup craisins
1 can cream of coconut (use light to ease on cal in recipe)
7 cups chicken stock
1/2 cup rice, raw
4 tbsp flour
3 tbsp water
2 cups 2% milk
salt and pepper to taste


How Do I Make Chicken Curry Soup?

Here is how you make Chicken Curry Soup:

Suate' chicken in vegetable oil, over medium high heat for 5 minutes. Add onions and garlic and saute until they are soft. Add Thyme, curry powder, onion powder and asian chili paste of cayenne pepper. Cook for 2 minutes. Add carrots, celery, craisins, cocunut and chicken stock. Bring to a boil. Add the rice and stir. Turn heat down to medium low and simmer for 20 minutes. In a small bowl, whsk together flour and water until smooth. Whisk flour mixture into soup and simmer another 2 minutes, stirring occasionally.
