Here is how you make Renee's homemade chicken, spinach, and carrot soup #2:

This is my healthy version of Italian Wedding Soup. Cook chicken first- I cube mine, and then saute in a bit of olive oil first (add juices to soup) or grill it dry and then cube. In stock pot, heat olive oil, saute onion and garlic until tender. Add chopped carrots, chicken stock, broth, rotini, chicken, spices. Bring to boil, turn down and simmer. I like to cook mine at least 20-30 minutes. Add bag of spinach, mix in and cook until spinach wilted. We like ours better the second day once flavors have melded even more!
