Chicken Breast, no skin, 1 breast, bone and skin removed chopped

Creme fraiche reduced fat, 3 tbsp
Fresh Chives, 1 tbsp chopped

Here is how you make Witches Brew Chicken Soup:

Melt the low fat spread in a large pan, add the chicken (if using fresh, uncooked), onion, carrots, chopped fresh green chilli and garlic and gently fry for a few minutes, (add chopped cooked chicken, if using, now).Add the chicken stock, chilli powder and ground cumin.Bring to the boil and simmer for approx 10 - 20 mins. (Depending on the size you have diced the veg).Meanwhile, mash about 1/3 of the beans in a small bowl, dissolve the cornflour into the milk and add that to the mashed beans.Stir the beans and the mashed bean mix into the soup gradually, aong with the peas and sweetcorn, stirring constantly until back to the boil.Cook for another 5 - 10 mins, stirring occasionally, until thickened. Stir in chopped fresh coriander.Season to taste.Serve with a tbsp half-fat creme fraiche on top of each soup, topped with some chopped chives.
