2 cups dried black beans (Plan B--two 15 ounce cans)
2 cloves garlic, peeled
1 tsp salt

1 medium size sweet potato, peeled and cut into 1/2 inch cubes (2 to 2 1/2 cups)
3 Tbs olive oil
1 medium size onion, chopped finely
4 cloves garlic, minced
1TB ground cumin
1/4 tsp ground cinnamon
1 tsp dried oregano
1/2 tsp cayenne
1 tsp paprika (smoked if you have it)
1 tsp chili powder
1/2 tsp salt
2 cups tomato puree (I used 28 ounce can tomatoes)
1/2 cup tomato paste
1-2 chipolte chiles in adobo sauce, minced


How Do I Make Black Bean-Sweet Potato Chili?

Here is how you make Black Bean-Sweet Potato Chili:

Place dried black beans in a soup pot and cover with water plus a few inches. Soak for at least four hours or overnight at room temperature. Drain. Return the beans to the pot, add 4 1/2 cups water to cover plus 2 cloves garlic. Bring to a boil, and cook at a hard boil for 5 minutes. Skim off any scum what rises to the top.Lower heat to medium-low and cook, covered, for at least 1 hour, until beans are tender to the bite. Cooking time will depend on the age of the beans--older beans take longer.Season the beans with 1 tsp salt and remove the garlic cloves.Bring about 3 cups of water to a boil in a medium-size saucepan and add the sweet potato cubes. Return to a boil, cover, and cook for 2 minutes. Drain and run under cold water, set aside.Heat the oil in a deep skillet over medium heat and add the onion. Cook until softened, about 6 minutes. Add the 4 cloves garlic, followed by the cumin-ground, cinnamon, oregano, cayenne, paprika, chili powder and 1/2 tsp salt and stir to combine. The mixture will be pasty. Add sweet potato cubes to coat with the aromatics and spices. Cook for an additional 3 to 5 minutes over medium-low heat.Puree 28 oz can of diced tomatoes and add, increase heat to medium, bringing to a lively simmer. Stir in tomatoe paste and 1-2 chipolte chiles in adobo sauce, minced, lower heat and cook until well blended, about 10 minutes, stirring regularly to keep from sticking and burning.Pour the sweet potato mixture into the beans and stir to combine. Simmer over medium-low heat until you are satisfied with the overall consistency and texture of the chili, about 30 minutes.
