Soak for at least four hours or overnight at room temperature. Drain. Return the beans to the pot, add 4 1/2 cups water to cover plus 2 cloves garlic. Bring to a boil, and cook at a hard boil for 5 minutes. Skim off any scum what rises to the top.Lower heat to medium-low and cook, covered, for at least 1 hour, until beans are tender to the bite. Cooking time will depend on the age of the beans--older beans take longer.Season the beans with 1 tsp salt and remove the garlic cloves.Bring about 3 cups of water to a boil in a medium-size saucepan and add the sweet potato cubes.
