1 46 oz bottle V8 Spicy Hot Low-Sodium vegetable juice
4 14.5 oz cans No salt added diced tomatoes
2 14.5 oz no salt added chili beans
1 packet McCormick chili seasoning mix, 30% less sodium variety
1 medium onion, diced
Black pepper
1 tsp garlic powder
1 tsp onion powder


How Do I Make Amy's Awesome Chili, Low-Sodium Version?

Here is how you make Amy's Awesome Chili, Low-Sodium Version:

Cook diced onion until translucent and beginning to brown. While onions are cooking, empty the cans of diced tomatoes, chili beans, the bottle of V8 Spicy Hot, and the packet of chili seasoning mix into a large pot or into your crock pot, begin heating on medium heat. When onions are done, add them to the pot. Brown the ground beef, season with pepper, onion powder, and garlic powder. Drain and add to pot. Add pork cubes to pot. Heat chili to near-boiling, then reduce to low/simmer and let simmer for a minimum of 2 hours - if you have 4 hours, that's even better! This will be a more-soupy yet chunky chili. If you can make it the day before an event and refrigerate it overnight, it thickens up very nicely if that's your preference.
