The ingredients for Amazing Corn Chowder are:

8-10 oz of Chicken breast cubed (One large or two small)
2 Cups Frozen Corn
1 Medium Celery stalk chopped
0.25cup Chopped onion
1 cup diced potato
1 tbsp Margarine/butter (I used light becel)
2 Cups 2% Milk
2 Cups Low Sodium Chicken Broth
1 tbsp White Flour
1tsp salt (to taste)
1 tbsp Pepper
1tbsp Thyme


How Do I Make Amazing Corn Chowder?

Here is how you make Amazing Corn Chowder:

Sprinkle pepper, salt and Thyme onto cubed chicken and toss into a non-stick frying pan. Meanwhile, in a large saucepan melt margarine. Once melted saute the onion. Once the onion is done, add the flour and stir. Add chicken broth, corn, potato and celery and cooked chicken.Bring to a boil, then lower to a simmer with the lid on for 20 minutes, stirring occasionally. Add Milk and bring back to a boil. If you like, let it simmer for a few minutes to thicken up some more.Makes approx 5 cups.Number of Servings: 5Recipe submitted by SparkPeople user DAFIZZLE.
