My Grandma Doris was a horrible cook, bless her heart, but this is one recipe she knocked out of the park. This is real, Rhode-Island style dirt-cheap chowder, so don't freak out at the butter and milk. It's necessary, and it's a marvelous soup. One bowl (2 cups) is really a whole mean unto itself. Dice the potatoes and onions while melting the butter in a soup pan. Saute the onions until translucent, then add the potatoes, cover with boiling water, and cook until the potatoes are tender. If you use a 2-quart saucepan, you will end up with it filled to the brim, so I recommend a 3-quart pan if you can get it.Take the soup pan off of the heat, add the creamed corn, and stir until thoroughly mixed. This gives it time to cool down so that when you add the room-temperature milk it won't curdle. Season with salt and pepper to taste.You will see all of the butter floating on top of the soup. It will look like a heart attack in a soup pan--don't be fooled! This is actually a reasonable recipe.
