5 strips bacon
1 large, sweet onion, finely chopped (about 1 1/2 cups)
3 medium carrots, finely chopped(about 1 cup)
3 stalks celery, finely chopped (about 1 cup)
1 tablespoons minced garlic
3/4 cup finely chopped red bell peppers (or mixed mini peppers- I used mini red, orange and yellow peppers)
5-6 cups fresh white corn kernels (from about 7 ears) or 2 bags frozen sweet white corn kernals
1/4 cup all-purpose flour
8 cups fat free, low sodium Chicken Stock (I used homemade)
1 large unpeeled potato, scrubbed and cut into 1/2-inch cubes (about 1 1/2 cups)
1 tablespoon kosher salt
1/4 teaspoon cayenne pepper
1 cup fat free half and half
Finely chopped fresh parsley, for garnish

Here is how you make Kim's Corn CHowder:

.Place an 8-quart stockpot over medium heat and cook the bacon until crispy, about 5 minutes. Remove the bacon and drain on paper towels. 2.Add the onions, carrots, and celery and cook, stirring often, until vegetables are soft, about 5 minutes. 3.Add the garlic and cook until fragrant, about 30 seconds. Add the bell peppers and corn to the pot and cook for 10 minutes, stirring often. 4.Sprinkle the flour into the pot and cook, stirring constantly, for 5 minutes. Heat chicken stock and pour into the pot and stir to combine. Use a whisk if necessary to break up any lumps. 5.Add the potatoes to the pot and bring to a boil, then reduce to a simmer and continue to cook for 20-40 minutes. If too chunky, use immersion blender to puree a little of the chowder.6.Crumble bacon. Season the chowder with the salt and cayenne and stir in the cream and bacon.
