2 medium Yukon Gold potatoes, peeled and diced
1 medium onion, diced
2 medium carrots, peeled and diced
3 stalks celery, diced
1/4 cup red bell pepper, diced
1/2 cup green beans, cut same size as other veggies (about 1/2 inch long)
4 large ears of corn, shucked
4 cups whole milk
Dash salt
Dash black pepper and white pepper
2 bay leaves
6 sprigs fresh thyme, chopped
6 sprigs fresh parsley, chopped
4 sprigs fresh dill, chopped
2 cups water


How Do I Make Tom's Wonderful Corn Chowder?

Here is how you make Tom's Wonderful Corn Chowder:

METHOD 1 (SIMPLE) Add all ingredients except herbs to one pot. Simmer until corn is tender, about 15 minutes, depending on the corn. Remove corn, cut from cob, add back in. Adjust seasonings, add chopped herbs. Remove bay leaves. Serve hot or cold. Serves 10.METHOD 2:Cut corn in half and place in pot on stove. Add milk, bay leaves, one half of the thyme, salt and black pepper. Bring to a boil, turn to low, simmer for 45 minutes. In a second pot, place peeled, diced potatoes in water with salt. Set aside. In a third larger pot, add carrots, celery, onions and peppers, and 2 cups of water. Bring to a boil until tender, about 5 minutes. Add green beans and cook 2 minutes more. Turn on your potatoes, bring to a boil, and cook until tender. Drain and add to veggies.Strain corn and save the milk. Cut corn off the cob and add milk and corn to veggies in big pot. Adjust salt and pepper to taste. Add chopped herbs. Serves 10. Can be served cold.
