This is easy to make and much tastier than the ready-made hummus I've had. You can adjust the garlic depending on the preferences of your audience. I also sometimes add a pinch of cumin, or a ready-made chicken shawarma seasoning I get at an ethnic grocery.

2 T tahini
.5c olive oil
.25c lemon juice, or to taste
1t salt, or to taste
2 cloves crushed garlic, or to taste

How Do I Make Emily's Hummus?

Here is how you make Emily's Hummus:

Drain and rinse the chickpeas. Put in a food processor with the tahini, salt, garlic ,lemon juice, and seasoning if using. Turn on processor and add olive oil through the food chute in a slow stream. If the mixture is not smooth add water slowly through chute until it is the consistancy you desire. (We like ours the consistancy of say, guacamole!) Taste, adjust garlic, salt, lemon as desired.
