How Do I Make Mediterranean Lentil Dip?

Here is how you make Mediterranean Lentil Dip:

Add lentils and water to a pot and bring to a boil over medium high heat. Reduce heat and simmer for 20 minutes or until tender (al dente). Once cooked, drain lentils and return them to the pot off heat. Season with salt and pepper and 1 tbsp olive oil. Adjust seasoning as needed.While lentils are cooking, heat a skillet over medium heat and add 1 tbsp olive oil and shallots and stir. Cook for a few minutes until shallots are softened. Add garlic and cook for a few minutes more. Remove from heat, but leave ingredients in the skillet.Prepare sauce:Add hummus and lemon juice to a mixing bowl and stir to combine. Add a bit of water to thin the sauce - it should be thick but still pourable. Taste and adjust seasoning as needed.Add the seasoned lentils to the skillet with the shallots and garlic. Add sauce and stir to combine.Serve garnished with finely chopped parsley and some diced kalamata olives. Can be served with vegetables, pita chips or crackers.
