Warm 2 T oil in a soup pot on medium heat; add 1 c. onions and 4 garlic cloves and saute for 5 minutes. Add 2.5 c each of cubed winter squash and potatoes and cook, stirring for a couple minutes. Add 2 stalks chopped celery, .5 c chopped carrots, 1 t dried oregano, 2 t salt, .5 t ground pepper, and 6 cups stock. Cook for 10-15 minutes or until potatoes are almost done.
