2 tbsp Olive Oil
12 oz. Canadian Bacon
8 cloves Garlic
2 cups chopped Onions
2 cups diced Celery
2 cups diced Carrots
2 cups diced Zucchini
5 cups water
4 cups tomato juice
3 cups canned red kidney beans, drained
1 T dried basil
1/2 tsp dried oregano leaves
1/2 tsp black pepper
2 T dried parsley
2 cups cooked ditalini


How Do I Make Quick Minestrone?

Here is how you make Quick Minestrone:

In large saucepan, heat oil over medium heat. Add Bacon and garlic and briefly saute. Add onion, celery, carrot and zucchini and cook, stirring occasionally, until vegetables are tender. Add remaining ingredients except ditalini and bring to a boil. Reduce heat and let simmer, stirring occasionally, for about 15 minutes. Add ditalini and let simmer until heated.
