Inspired by other egg muffin recipes I decided to try making my own. Came out great! I do think a silicone muffin pan makes all the difference with this and is worth the investment. They are great for freezing soup in individual portions too.

The ingredients for Baked Egg Muffins are:

1 carton Trader Joe's cageless egg whites
2 slices Ham, chopped into bits
6 T of shredded cheddar
Chives (or shallots or green onion).

You could also add other veggies as you have on hand, change up the cheese, go meatless, etc. I would love to try green or red pepper, spinach or even some cooked asparagus or broccoli.

Here is how you make Baked Egg Muffins:

Spray muffin pan with non-stick spray. If using metal tin use liners AND spray them with non-stick spray.Chop up your ingredients. Evenly divide ham, cheese, chives and whatever else between the muffin cups. Add liquid egg whites on top filling each cup up about 2/3 of the way.Bake in oven around 25-30 minutes or until lightly browned.
