How Do I Make Eggplant Parmesan?

Here is how you make Eggplant Parmesan:

Preheat oven to 400 degrees. Spray baking pan with Pam. Medium eggplant, peeled and sliced in quarter inch slices. Beat 3 egg whites with 3 tblsp water until foamy. Dip slices into egg white to coat. Put 1/4 cup low fat parmesan on a plate and dredge slices. Place on baking sheet and sprinkle with garlic powder to taste. Spray slices with cooking spray. Bake for 18 minutes and turn over. Cook an additional 12-15 minutes until light brown and tender. Serve with heated marinara sauce.
