Here is how you make Caldo de Pollo:

Boil garlic, bouillon, chicken, water, and celery until cooked through. Remove chicken and cut into 8 pieces. For this recipe 4ozs. Of chicken is a serving. If desired, remove and discard skin. While separating chicken, add potatoes and carrots to same pot and boil 10 minutes. Add onions, tomatoes, cilantro, chicken, and achiote. Boil 10 more minutes or until potatoes and carrots are cooked throigh. Serve over rice if desired.
