Here is how you make Sweet Potato Peanut Stew:

Saute onion and peppers in olive oil. Add garlic and ginger, saute for 2 minutes. Meanwhile, brown the ground beef and drain. Add the spices and tomato to the pepper/onion mixture.Add the sweet potato, diced into 1/2" chunks. Add water to cover the vegetables. Simmer 45 minutes.After simmering, scoop out about 1/2 c of the juice and mix with the peanut butter.
