8 cups rhubarb, cut into 1/4 inch pieces
8 cups water
2-3 cups sugar (I use 2 as my rhubarb is not overly tart)
1/2 cup lemon juice
1 small pkg. strawberry Jello or flavor of your choice
2 cups vodka


How Do I Make Rhubarb Slush?

Here is how you make Rhubarb Slush:

Cook the first 4 ingredients together over medium heat until tender. Pour mixture into strainer over large bowl and strain out all juice; reserve juice and discard the rhubarb mush.Add Jello flavor of choice; whisk until Jello is completely dissolved. I allow to cool slightly and then add the vodka.Place mixture in a rinsed clean ice cream pail and place in freezer. I stir occasionally while in freezer to keep alcohol mixed throughout.Once frozen, scoop into glass and add 7-up or strawberry soda.
