8 tablespoons extra-virgin olive oil, divided use
3 fresh jalape?os, ribs and seeds discarded, minced
2 picked pepperoncini, rinsed and minced
Freshly ground black pepper, to taste
2 tablespoons fresh lemon juice


How Do I Make Whipped Feta with Roasted Peppers?

Here is how you make Whipped Feta with Roasted Peppers:

1. Preheat broiler with rack in top position. Line a baking sheet with foil.2. Cut tops and bottoms off peppers and cut each pepper into three or four flat sections. Remove stem, seeds, and ribs. Place pepper sections (as well as tops and bottoms) skin side up, on foil-lined baking sheet.Makes 3 cups, or 24 2-tablespoon servings.3. Broil peppers a few minutes, until most of the skin bubbles and turns brown or black. Check and rotate the baking sheet often to char the peppers evenly, and remove pieces as they are done. Place the cooked pieces in a brown paper bag and close tightly to let the peppers steam.4. After all the pieces have steamed for at least 10 minutes, remove peppers from bag. Remove the skins with you hands (if any skins stick, use a paring knife, but do not rinse under water).5. Combine feta and 3 tablespoons olive oil in food processor. Pulse until feta is creamy.6. Add red peppers, jalape?os, pepperoncini, and a few grinds of black pepper. Pulse until the mixture is well combined. With processor running, drizzle in 6 tablespoons olive oil and lemon juice.7.
