Cut, with kitchen scissors, the bacon into very small strips. Bring a medium-sized saute pan to medium-high heat. Cook bacon for about 5 minutes, or until it is just before crispy. In a small-sized saute pan, transfer bacon (not the fat) and add garlic and onion. Cook for about 1 minute. Whisk in other mixture. Let cool to just warm and serve over a fresh spinach salad.
