Here is how you make Cannellini Bean and Beet Salad:

Boil beets until tender. Let beets cool in cold water. Peel the skin off and cut beets the way you desire. Chop a half of a small red onion or more if you desire and add to bowl with beets. Rinse a can of cannellini beans and add to bowl as well. Mix in vinegar, olive oil, salt to taste, and just a touch of splenda if desired. Makes for a great side or snack I think.
