This salad gets better the longer it sits in the fridge. I use canned mushrooms because they won't go bad in the salad but if I were eating it the same day or next day, I would use fresh mushrooms. The recipe also calls for 1/2 cup of slivered almonds but I reduced the amount to lower the fat. It also says that you can top with chow mein noodles but they tend to get soggy.
