I make a big salad at the beginning of the week. When I need lunch I just grab a bowl and add some olive oil and balsamic vinegar (or lemon juice) and feta cheese. The dressing and cheese are not included in the recipe as I kind of mix up what goes on top of the salad. Chop cucumber and red peppers into bite sized pieces. Chop water chestnuts into small pieces. Drain liquid from chicken. Fluff with fork and place in bowl with veggies. Rinse beans and add to bowl. When the pasta is cool add that to the bowl and mix well. Add salt, pepper and oregano to taste. Put it in the fridge for a quick meal on the run.
