Dice tomatoes and onion and combine with beans in a medium bowl. Slice corn off cob (can use raw, boiled, or roasted) and add to bowl. After preparing quinoa, spoon 1 cup into bowl or onto plate, then spoon 1/2 cup of bean-veggie mixture on top. Mix as desired. Top with 1/2 an avocado.Mix in preferred dressing if desired.
