2 cups low sodium vegetable broth (can sub water, chicken broth, etc)
1 can hominy (drained and rinsed)
1 can black beans (drained and rinsed)
2 Tbsp olive oil
1 Tbsp honey
Juice of 2 limes
1 Tbsp ground cumin
1/4 cup chopped fresh cilantro
salt and pepper to taste

1. Prepare the quinoa. Make sure to rinse it well before cooking. Add quinoa to a dry pan (toast dry for a few minutes if preferred). Add broth, bring to a boil then cover and simmer for 20 minutes until liquid is absorbed. Remove from the pan, put in a large bowl and and fluff with a fork. 2. Make your dressing by combining olive oil, lime juice, vinegar, honey, cumin, salt and pepper. Stir well.3. Drain and rinse the hominy and black beans.
