1 Granny Smith Apple, Ored & Diced
2 Tbsp. Lemon Juice
1 Head Romaine Lettuce, Chopped
1 Avocado, Diced
4 Oz. Reduced-Fat Feta Cheese, Crumbled
1 1/2 C. Diced Fresh Strawberries
1 C. Dried Cranberries
3/4 C. Light Balsamic Vinaigrette, or to Taste

Here is how you make Amy's Sensational Summer Salad:

1. Place the Chik'n Cutlets & Italian Dressing into a resealable plastic bag. Mix together to coat the Chik'n with the dressing, squeeze out excess air, & seal the bag. Marinate in the refrigerator for 1 hr.2. Preheat an outdoor grill for medium-high heat, & lightly oil grate.3. Remove the Chik'n from the marinade, & shake off excess. Discard the remaining marinade. Grill the Chik'n about 3 min. per side. Set aside to cool while preparing the ingredients for salad, then dice.4. Toss the diced apple with the lemon juice in a large mixing bowl until well coated; drain & discard any excess lemon juice. Place the lettuce into the mixing bowl, then sprinkle with the diced Chik'n, avocado, feta cheese, strawberries, & cranberries.
