Dressing ingredients:1/3 cup lemon juice3/4 cup olive oil1/4 tsp. salt1 tsp. sugar or splenda (I use splenda)1 tsp. dijon mustard (or Keen's dry mustard)1/2 tsp. thymePut everything in a glass jar with a lid and do the cucaracha (shake, shake, shake). I use one of those small white plastic ladles, adding one ladle-full per two persons to the salad.For the salad; add the following to your salad bowl:1 handful m?che (or arugula) per person (use your judgment). Rinse and spin.Cut slices of the log (one slice per person, 1/2 inch thick) and crumble into pieces. Toast nuts (but don't add to the salad bowl because they will lose their crispness):Use about 1 Tbsp. pine nuts and toast them lightly. The best way to toast nuts is in a small frying panon medium-high heat: just dump them in (no grease) and keep stirring/flipping with a wooden spoon until they're toasted. Careful, it starts slowly and then can burn quickly.
