Makes approximately 4 servings.The key is to sautee the garlic in the olive oil in order to breed the garlic taste throughout the salad without getting the concentrated heat.Chop all the other vegetable (or fruit if you are a stickler for accuracy in your f/v families) ingredients and mix together.Grate and add the romano cheese (I like the pecorino - romano cheese mix.)Add the mozzarella cheese.Mix up everything except the bacon.Now fry the bacon up.
