4 medium Red Ripe Tomatoes
2 sprigs Fresh Basil, chopped
1/2 onion, finely chopped (I used a Walla Walla and added part of the green top)
3 cloves fresh garlic, finely chopped
2 tablespoons Olive Oil
4 tablespoons Balsamic Vinegar
4 sticks Light String Cheese (1 oz each).

Here is how you make Tomato Basil and String Cheese Salad with Balsamic Dressing:

Finely chop the onion and garlic, and place in a plastic or glass bowl (Apparently Balsamic Vinegar doesn't react well to metal). Add the olive oil and Balsamic Vinegar to the bowl and mix.Chop the Basil and Tomatoes and add to the bowl. Mix a bit more.Cover and put in refrigerator until meal time (it can be served right away, but I think it's better to let it sit for a while).Add string cheese right before serving - it can either be sliced into tiny rounds, or served with the whole stick for later shredding (because it's fun to play with your food, no matter how old you are!).Serves 4.Number of Servings: 4Recipe submitted by SparkPeople user PHILE2920.
