I find myself faced with temptations a lot to eat things that are chock full of refined sugars and unhealthy things such as high fructose corn syrup. When I'm really craving something, this is a good inbetween meal snack for me to calm my pangs and not let me reach for the cookie/cake/lord knows what else plate at the office. If you buy a package of chicken breast then however much chicken you buy you divide up and pre-wrap/measure into 4 oz servings using a kitchen scale after its been cooked. I put servings in the fridge and always have lettuce easy to grab. Be aware that most normal skinless chicken breasts are about 6-7 oz of meat cooked. If you follow this recipe exactly, you'll weigh in with less than 200 calories on this meal and know that prepping a little once a week can go a long way towards meeting diet goals!Boil water with salt and place in chicken breasts as desired. (Good broth to save as well for night time beverage with minimum calories). Boil for about 10-15 minutes or long enough for chicken to be cooked through. If you leave it on to cook for too long the meat will be dry and not as moist. Pre-wash salad and arrange 2 cups of lettuce bed on plate. Take half of one small lemon and squeeze lemon juice on salad. When Chicken breast is ready, shred 4 oz chicken over salad and season with Mrs. Dash and use hot sauce instead of salad dressing to "kick it up a notch". Makes one very savory and flavorful snack.
