This is loosely based on the recipe from Simply in Season, but with a few of my own additions/subtractions. You could easily add cooked chicken if you like, though this is a fantastic salad as is, too! Tons of vitamins and minerals and flavor--this is great as a salad or as part of a wrap filling (just add greens!). I've also used leftovers as a soup base. What Are The Ingredients For Sesame Couscous Salad Recipe?The ingredients for Sesame Couscous Salad are: 1-1/2 c. chicken stock or vegetable broth1 tsp. tamari 1 tsp. sesame oil 1 c. whole wheat couscous, uncooked 1 medium red bell pepper, diced 1-1/2 c. edamame or snap peas (either shelled or in pods) 1-1/2 c. chopped broccoli florets 1-1/2 c. cooked chickpeas (may also use a 14 oz. can, rinsed and drained) 1/4 c. fresh lemon juice (yield from 1-2 lemons) 2 T. olive oil 2 tsp. tamari 1/4-1/2 tsp. crushed red pepper flakes (to taste) 1 T. toasted sesame seeds 1/4 c. pepitas, slivered almonds, chopped peanuts, or chopped cashews (whatever nut you've got on hand will work fine, really) How Do I Make Sesame Couscous Salad?Here is how you make Sesame Couscous Salad: Combine chicken stock, 1 tsp. tamari, and 1 tsp. sesame oil in microwave safe measuring cup. Microwave on high till boiling (about 2 minutes). Place couscous in large bowl and pour boiling stock mixture in. Cover and let stand till tender, 5-10 minutes. Fluff grain with a fork and stir in bell pepper. Cover and refrigerate to chill while you finish the remaining steps. In microwave safe bowl, or on the stovetop, steam the edamame for one minute. Add broccoli and steam together for another two minutes* or till crisp tender. Rinse with cold water and drain. Stir broccoli and edamame into couscous. Add garbanzos and continue chilling. In a small bowl, combine lemon juice, olive oil, tamari, red pepper flakes, and sesame oil, whisking till smooth. Drizzle dressing over couscous mixture and stir till well combined. Mix in pepitas (or nuts) and sesame seeds. Serve chilled or at room temperature. *Microwave times are approximate and may vary depending on the power of your microwave.
